i had no idea what a change it would be to have to read food labels.
in all fairness ive always eaten what i like and not had a second thought about it. i couldn't boil an egg or make a grilled cheese sandwich without a 50/50 shot of failure. i was what you might consider inept concerning all things cullinary.
when i had my first son in november of 2005 things changed. after leaving the hospital, going back, countless tests and eventually staying at PCMC for over a week we found out he was galactosemic. shortly after the initial shock we began researching what that would mean for the little guy, and in turn, us as a family. how was i supposed to cater to a special diet when all i ate was cereal and take-out?!
im basically doing this in hopes that it will help families out there that might be in the same boat and/or as clueless as we were in the begining. its interesting enough feeding picky little guys without adding to it!
